The ELISA R5 Sandwich is the most widely disseminated technique for the quantification of gluten. This technique was developed by the Gluten Unit and its definitive approval obtained a type I method classification by the Codex Alimentarius for analysis of gluten in all types of food. It is an immunochemical technique that uses antibody R5 to determine the amount of gluten in a solution. R5 is capable of detecting all the proteic fractions present in gluten and has a similar affinity towards all varieties of wheat, barley and rye.
This technique is compatible with the "Cocktail" solution and enables extraction of 100% of the gluten content in all types of food.
