Gluten is the generic term given to proteins that are insoluble in water but are found in cereal seeds. Its composition is varied and is made up of prolamins and glutenins. In turn, these are comprised of various different fractions. Among all these proteins are prolamins from wheat (gliadins), barley (hordeins) and rye (secalins) that are considered toxic for coeliac patients.
