This technique enables qualitative analysis of gluten in foods and is additional to immunological techniques. It enables the direct identification of gluten in foods elaborated with wheat, barley, rye and oats. Its principal advantage lies in the fact that it is capable of facilitating information on gluten even in complex mixtures and those that are difficult to resolve.

Mass spectrometry in the last few years has turned into an essential method for analysis of bio-macromolecules especially in the proteomic field. Imbiosis offers this service exclusively for the determination of gluten in complex foods.
