This test confirms the presence of gluten DNA from wheat, barley and/or rye. Imbiosis has 4 unique high sensitivity quantitative PCR systems to determine gliadins, secalins, hordenins, respectively, or all three at the same time (total gluten).
Quantification of DNA present in the sample makes it possible in many cases to extrapolate the gluten content in this food, although there are exceptions. The technique is very useful to know the relative amounts of gliadins, secalins and hordenins present in the sample.
