This is a semi-quantitative immunological technique that is developed from monoclonal antibody R5 for the detection of gluten in wheat, barley and rye. Imbiosis is the only company to offer this service.
This technique is useful to confirm the results obtained with the ELISA system, thereby enabling the ruling out of false positives and negatives. On the other hand, the Western Blot enables ascertaining the origin of the contamination and its degree of hydrolysis, leading to better knowledge of the food production process.
